Vinification Method / Maturation: Skin contact for 15 hours under inert atmosphere at 7 Celsius degrees, controlled alcoholic fermentation, stirring with fine lees for 9 months in white toasted french oak barrels of 225ml and stainless steel tanks.
Characteristics: Brilliant light yellow color with green hints. The delicious juice from the indigenous Amassi grape is blended with a bright Sauvignon Blanc, and then matured for nine months in barrels of American and French oak. Its’ fine nose is filled with aromas of mango, pineapple, and citrus, alongside hints of oak. Rich and expressive in the mouth, with a long and complex finish.
Food Pairing: Shellfish, fatty fish, fried sole in aromatic butter, poultry and pork in white sauces, smoked cheeses.
